The Mandatory Reads feature adds data to a property in the SharePoint user profile of the current user to denote which documents have been read by that user.
If you want to reset this data for a specific user, you can delete all information from the “Mandatory Documents Read” profile property which you can find by following the steps to edit User Profiles here: User Profile Administration - Managing Profiles for others
To delete only a specific document from the list you will need to inspect the text more closely and remove the correct artefact.
